Tessa’s GMA Gummy Eyeball Recipe

Ingredients:

  • 6 packets (40 grams total) of Knox unflavored gelatin

  • 1/4 cup of cold water

  • 1 Cup Light Corn Syrup + 2 Tablespoons

  • 1 Cup Sugar

  • 1/2 cup of water

  • Liquid drink mix- any flavor

  • 2-3 Tbsp Lemon Juice

  • Candy Flavoring

  • Food Coloring

  • Non-stick spray

Instructions:

  1. Mix 6 packets of gelatin (~40 grams) into 1/4 cup cold water to hydrate. Let sit for 5-10 minutes.

  2. Cook 1 cup sugar, 1 cup light corn syrup, and 1/2 cup water in the 2-3 quart pot to 230 degrees F over medium to high heat. Remove from heat.

  3. Let the sugar solution cool to 210-220 degrees F.

  4. While the sugar is cooling, slowly melt the gelatin down in the microwave in 30-second bursts until fluid.

  5. Slowly stir the gelatin solution into the sugar mixture and mix with a spatula until fully combined to make the gummy.

  6. Pour about 1/8 cup of gummy into one of the small mixing bowls and add dark food coloring (we used blue), 10 drops of flavoring, and 1/2 teaspoon of lemon juice. This will be the pupil of the eye.

  7. Pour about 1/4 cup of gummy into another small mixing bowl and add light food coloring (we used red), 20 drops of flavoring, and 1 teaspoon of lemon juice to make the colored portion of the eyeball.

  8. Pour the remaining gummy mixture into the stand mixer and whisk on high for 2-4 minutes along with 3ml of flavoring (1 full little bottle), and 2 tablespoons of lemon juice.

  9. In the last small mixing bowl, mix 2 tablespoons of light corn syrup with 2-3 teaspoons of liquid drink mix. This will be the gooey center.

  10. Spray sphere molds with non-stick spray. In 1 sheet of the silicone molds place one drop of dark gummy in the bottom of the mold. Refrigerate for 3-5 minutes.

  11. Once drops are set, add 3-5 drops of lighter-colored gummy on top of the dark drops to form the colored part of the eye. Refrigerate 3-5 minutes until set.

  12. Transfer the whipped gummy into the gallon ziplock back, cut off a small portion of the corner, and pipe the white gummy into all of the cavities of both sheets.

  13. With a dropper or disposable pipette, inject some of the flavored corn syrup goo into the center of the eyeball while the gummy is still fluid. Be careful to not let it leak over the edge.

  14. Place the eyeball halves that do not have the goo in them on top of the other halves and press lightly to seal them together. Refrigerate for 10 -20 minutes.

  15. Remove from mold and trim excess gummy away.

**If the gummy mixture starts to get stringy or stiff before complete, re-melt in the microwave in short bursts until fluid.
